SRC Student - James Gracey wins Premier Young Butcher 2017 Posted on 28/06/2017 00:00:00 Southern Regional College student James Gracey of Quails of Dromore in County Down has been crowned the UK’s best young butcher, winning the title Premier Young Butcher 2017. The final was organised by the National Federation of Meat and Food Traders (NFMFT) and hosted by Yandell Media at MEATUP in the MK Arena in Milton Keynes.

The five hour, six category competition recognised as the most demanding skills competition open to UK butchery apprentices saw the nation’s top apprentices demonstrate their skills in Seam Butchery and creating displays of Ready to Eat, Stuffed Roast, Barbecue and Kitchen Ready products.

With fourteen trophies, the competitors were assessed for craft skill, innovation and sound working practices by industry experts Danny Upson of Dalziel, international butchery judge and CEO of the Institute of Meat Keith Fisher and UK National Team Coach and industry consultant Viv Harvey.

Twenty-one-year-old James is a SRC Level 2 and Level 3 Butchery apprentice, who after just three years in the trade has Level 4 Food Hygiene and Management and is currently studying for an ILM level 5 Diploma in Management.

James showed dominance over other finalists winning both the Display and the Stuffed Roast categories with ‘Extravagant Stuffed Pork’. He was also declared Runner up for his Kitchen Ready products and got third place for a ‘Pork Swiss Role’ in the Ready to Eat category as well as finishing third for Seam Butchery and for his Barbecue selection.

Speaking at the presentations, South London butcher and NFMFT President Jim Sperring said “It’s great to see so much talent demonstrated by young people. They are a credit to themselves and to the trade and I am sure they all have great futures ahead of them!”

Presenting the finalists with certificates, medals and trophies alongside Mr Sperring was the Master of the Worshipful Company of Butchers Stuart Thompson, Chairman of the Institute of Meat Bill Jermey, Mark Garner of Weddel Swift, Terry Jones from Cambrian Training, Ian Mackway representing RAPS UK and Mike Richardson of AHDB Beef & Lamb and other sponsors AHDB pork, Dalziel and MEAT Ipswich.
